These are vigorous shrubs with large compound leaves and clusters of ivory flowers arranged in flat umbels that can be dipped in batter and fried. The purple-black berries are high in vitamins and antioxidants, making them popular for jams, syrups, wine, baking, and nutraceuticals. While York produces slightly larger fruit, all varieties are similar in flavour and productivity. These varieties are cold-hardy, disease-resistant, and require cross-pollination for fruit production. Elderberries thrive in well-drained soils with a pH of 6–7, providing a reliable fruit source in northern climates.
