Spartan is the result of a cross between McIntosh and Newtown Pippin and was released in 1936. The fruit is small to medium in size and has a greenish-yellow background that becomes a deep, rich burgundy-red. A bluish bloom will cover the fruit but a quick polishing will do the trick to have it shining again. The flesh is almost pure white with the slightest tones of pink, and the texture is fine-grained and melts in your mouth. This apple will grow to perfection in zones 4 to 6, and with wind protection it could likely withstand zone 3b. This apple keeps well into midwinter. Quite scab resistant. A good choice for organic production.
